If you have ever watched high-level Mario kart gameplay, you will see a ton of hopping… and this is one of the key mechanics of this game…
Hopping can be used to correct your line after drifts, perform shortcuts, and so much more! (You can hop be pressing the R/ZR buttons)
Alignment
When you hop, your vehicle will turn quickly and sharply, so you can use this to realign after drifts, and counter-hopping (hopping in the opposite direction you want to go and then starting your drift so you have more time to charge your mini turbo) is used by players all the time.
Shortcuts
You can hop off-road to take flashy shortcuts. And sometimes you can even fly over gaps by hopping!
